Broccoli Strawberry Salad

Inspired by one of my aunts favourite Christmas salads, this has now become one of my go to’s. It’s very simple and quick to prepare, but is still dense enough to be a satiating meal. This works as an easy, portable lunch to take to work or study, or is nice for a picnic on a warm day.

Broccoli is high in protein and vitamin C. Hailing from the brassica family of vegetables, it’s great as a detoxifier. Cucumber is perfect in the summer time and is full of refreshing, hydrating minerals. Strawberries add a little sweetness and are also high in vitamin C. But really, they’ve just there to look pretty.

Vegan + Vegetarian friendly

This is a very rough recipe, and is based on if the salad is a single serving meal for 1 person. If it’s a side salad, then it may go a bit further, so just adjust quantities to suit how much you need.

This is best made the night before, to allow the vinegar ample time to soak into the broccoli

INGREDIENTS

A small to medium head of broccoli, ideally organic and washed

Approx 1/4 cup Apple Cider Vinegar

1/2 a large cucumber or 1 small, either peeled or washed

1/4-1/2 an avocado

A generous handful of strawberries, washed

A handful of macadamias to serve, either chopped or whole

METHOD

  1. Remove any woody, unpalatably textured edges on the outer stalk, discard

  2. Chop the broccoli into small, bite sized pieces. The smaller the better, as this makes it easier to eat, and absorb the vinegar in the next step

  3. Place the chopped broccoli into a bowl. Drizzle vinegar over the top. I don’t usually formally measure, I just splash until it looks about right. Toss or stir until broccoli is well coated, remember, well coated, but not drowning. Cover and place in the fridge to soak

  4. Slice cucumber into bite sized pieces/rounds/quarters

  5. Slice strawberries either length ways or into quarters

  6. Take your avocado half and slice 1/2 cm lines through the flesh. Do this again diagonally, to make small sized pieces

  7. Remove broccoli from fridge, scoop out avocado flesh and add alongside the other chopped ingredients. Toss or stir until combined

  8. Return to fridge to be consumed the following day. Serve with the macadamias
