Banana Bread (GF)
This healthier version of banana bread is gluten and refined sugar free. It’s made with natural ingredients. Buckwheat flour and almond meal are used in place of traditional flour. Coconut sugar is used to sweeten. You can play around with the amount of sweetness and combination of spices to suit your liking. If you’re not that keen on butter, it can be easily substituted with a good quality oil such as macadamia, olive or coconut.
Ingredients
3 Bananas + 1 extra
1 Tsp Vanilla
3 Eggs
1/2 Tsp Baking Powder
1/3 Cup Butter, Softened
1/3 Cup Almond Milk
1/3-1/2 Cup Coconut Sugar (Depending on How Sweet You Want It To Be)
1 Cup Buckwheat Flour
1/2 Cup Almond Meal
2 Tsp Spices (Cinnamon, nutmeg, clove, ginger, cardamom etc)
Method
Preheat oven to 180 degrees Celsius
Beat butter and sugar together in a bowl until light and creamy. Add vanilla
Mash 3 of the bananas. Stir in to butter mixture along with the almond milk
Sift buckwheat flour, spices and baking powder in to the wet ingredients. Stir to combine. Pour in to a greased loaf pan. Slice remaining banana lengthways and place on top of the banana bread batter.
Bake for 40-45 mins. Leave to cool before serving.
Store in an air tight container. Store in the fridge.
